Mushroom is a very soft brown aniline leather with a cross hatch texture. I adore this leather. It's soft, comfortable, and builds patina quickly.
Personally I think it goes best with light brown stitching (as shown), but you might want something less low key and go with natural, white, olive drab or even royal blue stitching. It goes so well with just about anything. To see the options for thread colour see the stitching colours page.
